Hands down, Darth Bandon.

From Star Wars databank:

Like most of Darth Malak's followers, Bandon was once a student of the Jedi. But though the Force flowed through him, Bandon could never accept the Jedi teachings. Powerful emotions like anger and hate raged within him, and they fueled his strength. When the Sith rose to power, Bandon rejected his old Master and fled to the Sith Academy on Korriban.

There he embraced the dark side and the way of the Sith with every fiber of his being. His great strength in the Force, his natural cruelty and his absolute ruthlessness in his quest for power soon set him apart from his fellow students, and drew the calculating eye of Lord Malak himself.

In the tradition of their order, Malak sought a single pupil from among his many followers to become his chosen apprentice: one who could learn the terrible secrets of the Sith and use them to destroy the Jedi and the Republic.

Darth Bandon proved himself to be an excellent choice. Many Jedi fell beneath the blade of his lightsaber. Some in the Sith hierarchy wondered if Bandon would someday rise to challenge Malak for the mantle of Dark Lord, for that was the way of the Sith: the strong must rule, and when the apprentice surpasses the Master, the Master must fall.

My second choice? Aurra Sing.

From Databank (Take a look on the site. She's hawt as hell >_<):

Events such as the Boonta Eve Classic Podrace attract beings from all reaches of the Outer Rim Territories. Drawn by the prospect of winning a fortune by gambling on the outcome of the race, even wanted criminals surface from the shadows. Following them are bounty hunters such as Aurra Sing, who keep a close eye on the proceedings.

Aurra Sing is a laconic humanoid alien with chalk-white skin and long, bloodletting fingers. Surgically attached to her skull is a long, thin sensor implant that aids her in her hunts. Sing is clad in a functional red jumpsuit and wears little armor.

Darth Tyranus/Count Dooku

The 'effing man as far as I'm concerned. What a Sith should be, dangit. Calculating, cunning, eloquent with a precise and elegant fighting style to match. 'nuff said.

Darth maul. Why? he was the pure embodiment of the dark side. I LOVED his attitude, he had so much hate you could se it in his face, the way he paced like a pit bull looking at qui gon what totally flawless. His actions were of the darkside, not to mention his saber skills.

and yes, mace would have killed the emperor, and in a one on one duel, he would have torn apart anikan with the ls. anikan was good, but not that good. and why do i think mace would have bested darth vader? movement, mobility and ls skill. Darth was a machine, powerful, but a machine. he moved slower also because of that and would have to use the force anyway to put up a fight. straight up saber, mace.

I think any jedi/sith that was given time to show it's character in the movies deserves mention. Obi Wan was the most fun for me to watch because you see him become as good as he can be through the movies, I went for an opportunity with Maul and killed him (a lot of luck helped), then he got pwned by dooku (twice), and then took out grievous. He always did the best he could with what he had and never really got shaken by defeat or the possiblity of defeat.

Well My favorite jedi was yoda until I read about windu (waaaaayyy before episode 1 came out, forget episode 3 that movie did no justice for anyone except dark jedi/sith...obi-wan did shine though). To co-create a saber style that no jedi after him could master says a whole lot to me and that's one of the reason's I like him.
