The way I understand it, the "Old Man" comes and pays you a visit and tells you to go kill some Sith guy (I don't remember the name from another thread). I hear he is real tough so you want to take friends. Someone else posted some screen shots of this part, but I don't have the url to that thread handy. This is the exit quest for the Village.
Next is the start of the Padawan Trials. In order to start the Padawan Trials you kneel at a force shrine. I don't know exactly what you have to do for the Padawan Trials. Once you are done with the Padawan Trials you get your Jedi Robes and your second character slot. If I remember correctly, there was something odd about failing or giving up on the Padawan Trials. I don't remember the exact details, I'd check out the Test Center forums for more details.

It does matter who you talk to, I will be finding out who gives what type of quests shortly, and there will be updates to the Guide for the next stages soon.

Crafting technique basically further removes chance of a critical fail, I'm not sure how it operates, but it might be worth it for a high end crafter who makes a lot of top end merchandise.
