What LeBob said.
Gah, a few weeks ago I promised to make a FAQ that included this oft-asked question. I gotta get around to converting my "Knowledge Base" thread into a general Musician FAQ. Just gimme a little more time, folks...

Just make sure you get it in the right place and that the mayor doesn't come around a week later and ask you to move it because the area isn't zoned for it. Don't laugh, I had this happen to me in my previous player city! It was completely decorated and waiting for the grand opening to boot!

Also, remember that it can only be transfered to another master dancer, a master musician or a master chef.

Cantinas are private structures, not Civic, so you can have as many as you can fit in there I believe.

That's correct, as far as I can tell...as many as you want. Technically, I don't think you have to be in a city...just like a house, you could put it out in the middle of nowhere. It's one of those things where if you're running low on space in your city, you could probably put it right on the outskirts even so that even if it's not technically in city limits, it still seems like it is.

No, Cantina's, Theatre's and Hospitals must be placed in a Player City of the appropriate rank, but if the City disapears they remain. However, you can have as many as people want in a city.
Since they are privately placed structures maintenance is not paid out of the City Treasury, but by the owner.

In a supposed business deal, I took the 'ownership' (read that as it was transfered to me to free up the other person'slots) of a cantina and was inititially happy. Things have changed and I would like to open a cantina of my own but find myself unable to as I am down to one due to a couple storage houses and such. I am wanting to know if the original owner, who is no longer a master dancer or muscian, can take ownership back of her cantina or will I have to find someone who is one to take it temporarily?
