As far as I can see, your off to an amazing start...I wish I had put this much into it from the start.
As far as "Good" quality of materials, it's hard to say, but you can get an idea of average numbers on those resources from swgcraft.com. One thing to keep in mind...300 SR on a particular metal "might" be the best for a particular weapon or component...so you really need to keep on your toes with resources, and make sure you don't just look at the high numbers, but always check if a certain resource is the best for what you'll be using it for. I personally missed a great spawn of Desh Copper because I was looking at 800's and 900's for quality, and not realizing that the 500's where it was at was actually a great number compared toother spawns of that metal....so always pay attention to what you have, and compare.

A few thoughts:
- Jawa Ion Rifle - PvPers love these since it's stun damage
- Maybe something for the swordsmen - power hammer?
- Vibroblade is a throwaway - fencers will use them for specials for the low HAM costs, but I doubt you'll sell many and those you do will be very cheap
- DH17 short carbine - EE3 doesn't seem to be that popular, and the short DH17 carbine actually looks a lot like the EE3 so you don't get that "CDEF look"
- Republic blaster or the DX2- otherwise, you won't have anything for the pistoleer crowd
I'm by no means a successful weaponsmith yet, but from looking around on Scylla that's kind of the mix I see. I'd also start looking at the loot schematics (scythe, disruptor rifle, etc) and see what you'd need for those. At some point when you get successful, people will start seeking you out to craft custom weps with schematics/loot drops (or so I hear).
