for the exact same reason that Criminal Masterminds always stop to explain their entire master plan instead of killing the hero that tried to thwart his evil plan. as soon as a villian breaks into that monologue you know the hero will escape, and the day will be saved. the same goes for when you hesitate to kill your nemesis.

He had the disadvantage of being against Obi Wan Kenobi. Obi is the pure-of-heart hero of Star Wars, quite possibly the most powerful Jediever behind Yoda or Luke. Did you ever notice that even when Obi Wan loses a fight, the badguy is unable to kill him? Something ALWAYS intervenes. I would guess that "something" is the force.
A two-bit badguy like Maul has no chance vs an epic hero.

I'm still amazed how Maul never had a chance to FoW his way out of it. When was he incapped?

Maul got incapped earlier on Dath when a NS Elder spawned on him. He had to FOW and burst away, so when it came time to FOW later he still had 30 sconds left on his FOW timer. I heard after that he pretty much sold his account

Unfortunately Lucas has some pathological disorder that forces him to kill the coolest characters in the lamest most anti-climactic ways...
Boba Fett- crash into the Sarlaac...with girlish scream.
Jango Fett- Lame one-shot decapitation instead of a dramatic fight.
Darth Maul- Lame one shot kill after impressive battle.
Emperor- Thrown down (conviently placed) reactor core... with girlish scream.
Darth Vader- Entire image killed by removing his helmet to reveal a pasty skinned old gimp
Stormtroopers on Endor- Beaten down by furry midgets with sticks and bones... occaisional girlish screams.
Ah well, c'est la vie.
