Something to remember is that Melee (& Ranged Deffense) is capped at +125 & can only be taken over that by foods.
Perosnly I'd Recomend this:
TKM
Fencer 3-4-4-0
Pistoleer 0-0-4-0
Master Brawler
Novice Medic
This gives you:
+121 Melee Deffense (easily caped with a +4 tape if you can get your hands on one)
+106 Ranged Deffense
Lots of high State Deffenses
It also gives you some nice brawler specials which would come in usfull as you would be fighting melee mush of the time with this template. You would have intimidate2 as well as a 20m KD. & of course you have Novice Medic so you can heal your self.
I'm not great with deffensive templates but this seems to be a generaly effective one. I'm sure Atama or one of the others who stack a bit will improve it if possible. I'm pretty sure the same template has been said earlier in this thread.

The speed and accuracy bonuses would definitely help with swords as things stand, and overall it looks like a very nice template. You could drop Medic down one and finish out the other Combat Prowess tree though, unless you just really want 2-0-0-0.

Personally, of the two, I would go with the TKM, Pistoleer, Smuggler, Fencer template, mainly because healing isn't that high of a priority in most fights that you will encounter (and in high-end PvE you should have a Doc or at least a Medic there with you anyway). You could always drop Medic down to Novice, retaining the ability to use Stim B's, and invest all the other points elsewhere to increase defences also.

The reson why I picked 3-0-0-0 Fencer was to get higher melee defense, but looking through your templates, state defense might be more important. I do notice I get knocked down by higher end mobs like NS and Rancors. Any input would be greatly appreciated.

You seem pretty set on your BH part so are trying to work around that, from there it's down to what you want to kill. If you enjoy hunting Jedi alot but want to be able to solo in PvE very high level mobs I would suggest this template:
BH 3-0-4-0
Pistols 0-0-4-0
Master Swords
With that you have nice deffenses, the ability to track/hunt Jedi, you have Swords which is very effective againest a Jediif you can up your speed a bit & geta high damage hammer (this is more for the higher level Jedi who no longer have Melee Mitigation). As well as that you have a wide ranged in pistol skills so that if they run away you can still shoot them till you catch them up (or you can take out their bike etc).
However if you want a medium effectiveness PvE template as well as Jedi hunting I would say this:
BH 3-0-4-0
TKM
Pistol 0-0-4-0 OR Smuggler 0-0-4-0
With this you still have the tracking ability for Jedi, you have a wide range of pistol skills. TK does let you take on much high level PvE as long as you learn your limits, you will find grouping will improve this as TK do make some of the best tanks. As well as that it is very effective for taking on Jedi as you have very high toughness as a TK & so absorb a fair bit of the damage a Jedi does. You have the choice of either Smuggler Dirty Fighting which gives you feigndeath to make up for the lack of medic & some of the nicest pistol specials in the game (in my opinion), or you can take Pistols 0-0-4-0 for some other nice specials as well as some nice deffenses. As well as that you will have Ranged mitigation two which the only other way in these templates you can get is if you go 4-X-X-X BH if I remember correctly.
If you take the TK option though you have to grasp that you have your limits, TK is great up to medium-high level PvE, once you cross the line to very high level stuff though (generaly stuff thats not really ment to be soloable anyway) you lose alot of effectivness & need to learn your role.

Just to add, as you can probably tell, I don't recomend the LLC tree without master, it's slow, it's unaccurate, & to be honnest skill points could be invested much more wisely, it's not even that powerful in my opinion & comes in usful in only a few places.
