I definately agree about the hats. I love hats!! I wish we had sun-hats, caps, jesters caps, fidoras, etc (many of these are on our top 10 list, I know).
As for a welcome, I have loved tailoring ever since I started it. I started it with a new charcter and as my first crafting profession. I didn't have crafting macros nor resources. I really enjoyed this because I had to constantly sell items to make money to purchase materials to go on -- this really made me get familiar with all my items. I haven't heard of a Tailor/DE combo before, but I guess you could specialize in entertainer stuff (sexy clothes and foam droids, yay!!).
I wouldn't worry too much about having a store with everything displayed. Many people either a) know exactly what they want or b) have no clue and just wantyou to make them look cool. By the way, "make me look cool" usually means an all-black outfit.
I also suggest that you watch the movies many many times. Then watch them a few more times. I have one of the five theatrical films going almost non-stop which seems to help me quite a bit. You might get a /tell asking if you can make someone look like a character. Han is the easiest character but "can you make me look like a Jedi" can be a bit more confusing. For example,Mace Windulooks quite a bit different than Luke from ROTJ. And Padme. Yikes!. Padme is (to quote Carrie Fisher) "the Liberace of Star Wars". If you know the movies well, you can find a shot quickly and pick out the right clothes.
My last advice is, never let someone go away unhappy. The resources you need to remake an item will not bankrupt you (and you can always ask for the original item back so you can sell it elsewhere). I once spent nearly an hour trying to get a shirt just the right color of creme to match pants -- several styles of shirts with different textures and my video card colors were not matching the client's colors. But, in the end I was rewarded with a job-well-done and a referral some days later.
I might not be filthy rich, but I enjoy (nearly) every moment of tailoring!

I am in a similar boat you are, have one char that is a Sword/Ranger and the other being a Tailor/Merchant. I think you will enjoy it greatly. Only word of advice I have is not to grind it too fast. If you learn different combinations and how to use the colorsyou haveon the way up, you will find it that much more rewarding IMO. Try to get people to test things often...
