I've never been that clinical about what my skills and weaponry are - I tend to intimidate, 2hsweep (if fighting multiple target), then 2hSpin (multiples) or 2hMeleeHit if fighting a single target. I am sure from reading all the good advice on here that there is much more I could do tactically to win more fights with the higher end mobs - and I mean nightsisters! I keep getting killed by Nightsisters, even though I have Master Swords friends that can solo even the higher end ones (not counting Elders). Incidentally Master Swords is the only elite combat prof I use - I have no lines in Fencer, Pike, Rifle, or anything else (my other points are taken up with artisan lol), so if you think I should get some then by all means let me know!
Here's my weaponry:
2x PH (250-499 or so) speed: 5s (roughly)
1x Scythe speed: 3.2s damage (unsure - they don't vary much do they?)
1x Gamorrean Axe - speed/damage not good, but got a dot on it (Jabbas theme park reward, I'm sure you all know the one I mean)
Any advice anyone can offer would be appreciate to help me with these Nightsisters, and other higher end mobs - I generally don't PvP but do engage in the odd factioned PvP event, so any general help with beating up people that persist in eyeshotting me all the time would also be much appreciated!

Until you hit the speed cap at 94, speed sliced weapons are your friend. You'll have more luck with a good PH that is speed sliced than you will with those 5second PHs. Same goes with the Scythe....3.2 is about a second slower than most I have seen before slicing. I bet a trip to the Geo caves (or 10) will get you the loot you need to get a better one made. In lue of a scythe (the poor souls who have no more scythe schematics left), the Executioner's Hacks are pretty descent, andare better than a 2H curved sword.
Also, 2HandMeleeHit3? yeah, its the highest dmg mod, but it is random....you'll have better luck dropping NS with Headhit3. All your damage goes to their mind, and isnt wasted on other HAM bars. Try to lure one or two from the group as well. unless they are low level, don't use the area hits. Just lure one or two away from the group, and headhit3 them to death...don't forget to intimidate!
For NS, medic or smuggler's FeignDeath is also handy.
For PVP..the eyeshot thing....a good stun layered Composite helmet is your best bet..also...a good sheild will go a long way in keeping you alive. A stun layered Composite Chestplate and boots are good to have for PVP as well. And once again, Headhit3....or if you have master brawler....meleehit3 till dizzy, and then lunge2 for the Dizzy/KD combo..then headhit3
I pulled that off on a TKM a couple days ago...had him on the ground and pounded on him...he was VERY surpised to have that put back on him after he was trying to do it with me.

- Lunge2
- HeadHit3 until dead
Rinse and Repeat.
Be sure to check out the mob's resists before engaging. If low blast resists then use a PH if low kinetic the use a scythe.

I agree that you need to be using speed-sliced weapons, definitely. At least get some speed powerups for your weapons now. Ahrisa, brandy, and sometimes canapes to keep your mind bar full and special costs very low. Synth can certainly help if you're dying because of damage to your other bars. Always keep Center of Being active.
