This is nota nerf... it is a game balance. In what other game are you able to go from new player to full mastery of your chosen career in one day? This was how things were before this change. Even under the old system I thought it was insane that you could finish off your character in 1-2 weeks of grinding.
As for creature levels then it has already been stated that things will not stay this way, but they first want to get in new creatures and then balance the old ones according to that.
I have read people complaining about content is geared towards CL80... this is what is really bogus. Jabba themepark has level 15 mobs... this is not CL80 content. I know that other aspects of the game require CL80, but that is high end loot you can get from that. Again show me any other game where you can get hihg end loot at low levels. If you think grinding is hard here then I bet you haven't tried other games out there... especially older ones. Some games it could take you months of hard grinding before you could get near the end of your profession.

If you can go to full elite mastery in one day you need to find other things to do with your time.
Because some people can and choose to power grind their way up to mastery in an extremely short time doesn't mean that you need to punish the rest of the player base for it.
They need to come up with better gates to profession mastery like quests. They need to come up with better ways of earning xp like quests. They need to give people better things to do than grind xp like quests.
IN OTHER WORDS THE ONLY THING THIS GAME HAS IS XP AND IT NEEDS MORE CONTENT LIKE QUESTS!
Adding bettercontent and better gateways to the games rewards is the only thing that will save it from the power gamers that cause them to punish the masses.
