I feel quite fortunate to have not experienced such a situation. All my customers have agreed to my terms and payed on the spot.

The closest I've come was this one time I starting to hand back some armor I just sliced and the guy said he didn't have the credits on him. He said he'd be right back with the credits(I was out in the deserton Tat) and ran off to get them from a bank. My point here being that my customer understood that he wouldn't get his stuff back until he payed. For him I stuffed his gear into a droid just in case of a mishap. I will go the extra mile for my good customers.
