As for your creatures: normally they will keep aggro on them. Even if they don't, just peace out, order your animal to attack, and then run (don't need to burst, just normal run). I had this on a macro when I was doing the CH thing. The attacking creature would normally turn on my pet because I wasn't attacking anymore.
In PvP, I'll tell you straight up: CH SUCKS!!! From what I've been told it used to dominate PvP and then the devs over-nerfed it to a joke in PvP. Animals do one quarter damage in PvP (standard PvP damage reducation), but they TAKE full damage. They also don't heal worth anything and on some servers, petstims will cost you big.
As for the Ranger/Rifleman template for PvP: soloing it does suck. As part of a group, you give something no one else can: early warning. When I'm out with my guild PvPing, I'm always using areatrack to keep a lookout for incoming enemies. Granted, once the fighting begins I'm not as effective as some of my guildmates... but I do provide a valuable skill until then. And I like providing something other than buttkicking power.
Also, I might add that some of us Rangers are petitioning that at Master Ranger we gain the ability to use our traps on players and people (NPCs). It would help make Rangers more effective in PvP without overpowering us as the most dangerous trap (Adhesive Mesh), IMHO, doesn't last too long. Long enough to be effective, but not so much as to be a gamebreaker.
And before all the BHs get on the 'we should be the only ones allowed to use traps on players' thread: they don't have to learn traps anymore, so don't complain. Also, I think rangers have a valid reason for being able to use traps on people. Tracking 4 is called MAN Hunting. Ummm... how can I hunt without using traps? So, maybe the combat rebalance will make rangers more effective PvPers.
As for PvE, Rangers can (and should) be kings of it. /conceal and our creature to-hit bonuses and a rifleman make the ultimate PvE combo. conceal, throw trap, headshot 3, harvest. And its profitable too. Armorsmiths need all sorts of hide for Wookie Armor and they need Endor Wooly for something else. Trust me, they pay through the nose for this stuff. Add on docs and combat medics needing various meat, cooks needing milk (I sell crap milk on the bazaar at 5 to 10 cpu and it doesn't last a day); and, you can make good money once you get a client base established and learn where to harvest effectively.

Someone suggested Pikeman/Rifleman as a PvP template. Just wanted to let you know, Pikeman in PvP is not that great without DOT lances, which can be pricey, so it's really not worth it for PvP. However, Rifleman/Pikeman is a powerful PvE template(I'm a PvE player, like yourself), so that is definitely something to consider. CH/Rifleman is probably one of the most fun.

I'm liking MRM / MBH / SL0400 / FS just a little. Is any of this incorrect?

not bad witha couple of AAs in your boots on top of that!
195 melee (225 w/rif or flamethrower/rocketlauncher)
185 ranged (215 w/rif FT or RL)
50% reduction in all damage taken
+500 health from self buff
when you need to get around you can buff def by +500 (can't use while fighting witha rifle)
Never pay for armour again!

Currently and satisfied so far with:
Master Marksman / Master Rifleman / Master Carbineer - 47 SPs left over, but used with Medic & Scout with my character. Play around with a Profession Calculator with these 47 extra SPs...

Pros- The ability to control ones opponet with intimidates, roots, snares and kd while dealing high damage
-good accuracy and speed everything you point your rifle at is as good as dead in
-utilises every ranged trick in the book or at least the most important ones for both crowd and single targets
Cons- Low defence but who needs them when you can layout most things before they get a change to come near you.
- everything you shot in groups 9/10 times comes and aggros you
