But, assuming we were, there will always be someone underselling the market to make some quick cash. Or underselling because they are new to the game and don't know any better. Or they don't realize exactly how valuable certain resources can be with the right stats. Or they just don't care. Then there will always be those armorsmiths, chefs, etc., who get fed up with an inconsistent/expensive supply line and buy 2nd accounts to do it themselves.
Resource gatherers in general are never going to make as much money as the end-crafters do.
Also, I may be wrong, but most Rangers on these forums tend to do well for themselves as it stands and don't mind not being uber-rich.

Maybe you need to take a class on supply and demand and marketing. In thisuniverse of free enterprise, you are allowed to charge what you like. In turn, a chef or armorsmith can sell his product for any amount that he likes. Charge what people will pay. If you don't want to be a slave, then stop harvesting for money...If you want a lot of cash, become a crafter. Keep in mind that a chef or AS has to use resources other than what you sell them, and most likely they have to buy those resources.
Also, the entire economy of SWG is hosed anyway, and economic collapse is imminent (the devs will someday have to nix everyones cash if they want to restabilize the economy).

You are correct in your assessment of the large price fluctuations our profession sees for our materials. There are a number of reasons for this besides undercutting. These are also reasons why 'price-fixing' would be tough.
One is the stats. AS look at 4 stats: OQ, SR, UT and ML. Docs and Medics look at 2: OQ and PE. Tailors and Archys don't care about stats. Not sure about chefs since I don't have any as clients currently.
Another is bartering. I barter a lot and I know of others who do the same. I can't tell you the last time I paid credits for something other than a shuttle ticket or knick-nack for my house. AS supply me with armor, Tailors with clothes and Docs with meds. Now all I need is to find a chef as a customer and I'll be set.
A third reason is guilds. PA's hunt and mine for themselves and distribute the resources and goods accordingly. I not only hunt for my guild, but for allies as well. I also have a customer base that I take care of and they take care of me.
My suggestion is work on developing clientele. They will pay you well for delivering a set order at a set time. They will also keep you supplied with stuff. It's a very symbiotic relationship.
however, look at modern situations...ie: coffee
we buy a cup of coffee for around 1.50
I buy fresh beans for about 12.00 per pound that makes approx 50 pots of coffee
To buy unprocessed green coffee beans from a coffee farmer is approx 20 to 90 cents a pound (last time i checked)
there is of course, distribution, marketing, packaging, processing that drive up the initial cost of beans from the grower. Do the coffee growers see most of that profit? Of course not.
I see the rangering harvesting business as the first line production. Then we sell it to the armorsmiths who also have to collect bone, metal, fiberplast, and several other items that they have to purchase as well. They have the skill to assemble the raw items and create something usefull.
By driving up the resource costs, the costs of the finished product will go up as well further affecting the economy.
What do we lose when hunting? time/ travel/ stims/ clone/ and repairs on our weapons. This should be figured in on any job, I dont sell for less than 5 cpu and I sell in units of 5k to my clients. On my last job, I harvested 20k units of hide for an armorsmith for 40cpu I bartered 10k units for a great set of armor and was paid for the other 10k. For me, I have more money than I need, I dont have a lot compared to some of the crafters or businessmen and women, but I have enough.
I do jobs when I want and go fun-hunt when I want. If we in a sense "unionize" then while some of us would be paid a lot more for what we do, we would also be driving up the rates of inflation for the things we purchase...hurting a lot of characters (esp the new ones).
again, i feel your frustration cause I was a poor ranger for a long time, it just took some work to get my name out there and start to get jobs.

I believe with the Chef revamp (which is schedule to be published tomorrow), there are additional stats to consider. I know Decay Resist now plays a role in experimentation on many foods. Just something to consider.

Been living off the economy for longer than that.
I buy weapons, that's it. I harvest hides for a tailor and get free clothes; meats for a doc for free stims; and I know of a BE who owes me a pet or three. What's buy mean? Barter.

I just made 1.5million credits off two hunts, Dath Bone and Dant Carn. Got 34k units of each and sold for 30cpu and 25cpu respectively. I now have 5 million credits in the bank and a house full of weapons and spice and food. I dont use pets, very few stims, and no armor. I have NO expense practically. Yeah, some folks have like 100 million credits, but what the heck am I going to do with that?? Buy stupid Krayt weapons??? Buy "l33t' compo armor that I have no use for??
Poor ranger? Nobody needs to be a poor ranger. That's the silliest thing I have ever heard.
