you can have master doc/master chef, but only the artisan business line, so one vendor (a crappy one at that)

Do I need to get master chef? All I really want to make is bivoli and vasarian brandy.

Yes pretty much ya need master to produce quality items. Short of Master ya wont have all the experiment points and that to make the best stuff. Plus if I remeberright to make heavy additives ya have to be Master Chef, I think?

First you need the last line completely to have 9 exp points, without that, you can forget to make anything you might want yourself 
Vasarian Brandy is at Mixtology 3.
Bivoli is at Entrees 4.
So the minimum skills you need to make both Bivoli and Brandy is: 4034
with very good resources you might be able to do some 370/45min brandy, or 400/42min etc (it will require some amazing successes, or it will be worse, so it takes a lot of time). It will sell, but surely not for the prices a 12-point chef can get.
I think making +25/2 uses Bivoli should be possible with good resources and good additives, but it will take up all 9 or at the least 8 exp points. 25/3 is impossible.
Now as was already mentioned Bivoli needs Heavy Food Additives (or you'll just hit around +20). You buy the tissue from a BE but you have to turn the tissues into Additives yourself.
The schematic to do this is given at Master Chef.
Of course, you can just find another Master Chef to make you those schematics for the additives, but then you can also go to that chef from the start and buy his products.
Not sure if you find a chef willing to do that.

For grinding, spinattack2.
Before you are speedcapped, spinattack2.
When you are speedcapped, area3.
They have the same damage modifiers but spinattack2 is faster.

Could be a recycler component. On a guess, I'd say the chemical recycler...
