There's already some EU material that shows that none-Jedi can fly a so called Jedi Starfighter. I believe in one of the newer books Wedge pilots a Jedi Starfighter after crashing on Geonosis, and in Starwars Battlefront anyone was able to pilot a Jedi Starfighter.

Also, rather than just give us the Episode III Jedi Starfighter, the devs should put the Episode II Delta 7 version in, too, and just make it an alternate chassis design of the Episode III version. Granted, it would be nice to one day have them bothas seperate ships with there own unique stats, but I have a feeling that once we get one of the Jedi Starfighters, it would be a very long time, if ever, before we got a second one. Therefore I say just simplify things and give us both as the same ship, much in the same way that the various Hutt and Blacksun fighters have cosmetic chassis variations for each type of ship.
