Well, Im sure that in starwars, the Futuristic settings, they learned how to stablize anti-matter
Or they could just use water, or air as a propultion for the missles..., all possable theiries

ummmmm, both the y-wing and a-wing carry a load of concussion missiles as the standard munition. the Tie-Bomber can carry either concussion missiles or proton torpedoes. the droid army also uses mobile missile platforms in episode 2.
IMHO concussion missiles and proton torpedoes are very much a part of the star wars universe.
Now how about being able to hear every sound that occurs in the vacuum of space? NASA explain that one yet?
No and they don't have to. This may be a surprise to you, but Star Wars is fantasy

Remember, it was a long time ago in a galaxy far far away. Perhaps the "dust" clouds have not contracted enough and space is not a total vacum.
Perhaps physics are different there. Just because the rules discoverd by us (couple hundreds of years old) seem to hold everwhere does not make this true.
10,000 years before Episode 1-6 was when FTL was discovered. So 10,000 years in their past is still far far advanced over Earth. Thus perhaps they have a different understanding about space and created technologies that appear to be fantasy that extend sound beyond the area we beleive possible.
Perhaps there really is an ether (old earth concept) in space that propogates some waves used by the super-advanced engines of SW that when it reaches air is converted to sound waves. Similar to radio (sound is converted to an electronic medium, transmitted, and converted back to sound).
Plenty of explainations that do not require "magic" or "fantasy" to explain.

Umm, George Lucas himself has said that Star Wars is fantasy and not science fiction.

No-one's mentioned B-wings, Gunships, or even... ahem... Missile Boats yet.
I've read it elsewhere on these forums, you have to remember the "space battles" are based on WWII Dogfights. Atmospheric fighting, sounds, movement (how does killing the thruster slow you down in space?). Star Wars is just set in space, not based on space.
And like the other guy said, this is a long time ago in a galaxy far, far away. Who's to say what goes?

The Empire even built anti-starfighter missles (called diamond boron missles) and to top that off, the Galaxy Gun (which shot missles capable of pretty much destroying worlds) Aside from that, you've got a galaxy-wide array of things to shoot at people...missles I'm sure make up part of that arsenal.

Simple Science Fiction solution to sounds in space
There are no sounds in space...but your onboard sensors and computer "que" onto outside events...Like a ship coming toward you from behind...and produce an audible warning..in the form of an appropriate sound..;.and coming from the appropriate direction.
This is to allow a starship pilot to use more than just one sense (vision) to help manage and fight their ship.
Think that would explain it?

Uh yeah - Episode 2. Now maybe we should discuss the physics of a an oxygen burning motor in the vacum of space.
I believe we use oxygen rich fuel for our "motoers" in space for NASA shuttles.

erm... you folks DO know that Star wars is NOT Science Fiction, but basically a Fairy Tale in Space, don't you?
We got Queens and Princesses, Good and Evil Wizards and Knights and Evil Knights and all that stuff... that's why we can hear sounds in space and why lightsabers don't just pass through each other ...
