Joystick might look cool and "imersive" but nothing can be more accurate than a mousse
onebutton for nearest target, an one other for "under reticle target"
left and right arrow for rolls
and shift for match speed ( so close to arrows)
and you dont need anything else

Well, I really think it depends on the player and the equipment settings.
I did fine with the mouse up until 4-3-3-3, but then I really needed the joystick to get to a point where I was responsive enough to be competitive in PvE and PvP.
The single most important thing I found was the ability to twist the joystick and gain the ability to really spin my ship around quick.

Did they ever fix Ship Control Delta (analog Stick-Axis)?

QFE. I use a combination of the Cyborg EVO and a Nostromo N50 SpeedPad. Works very well.

I definatly sugest the Saiteks. I had an old Logitech, but it had an number of issues. I just recently gotmy new Saitek X52 Flight Control Simulator(Two piece set, Joystick and Throttle), although expensive, well worth it.

I too originally had the Logitech, after a month of playing I couldn't move to the right at all (this is a very common problem with Logitech from what I have read on numerous forums - swg, amazon, etc). I got so frustrated with the ai always moving right forcing me to always go left to follow someone on the right. Then all my friends leaving the game so I too left. Came back with the CU and my friends and then bought a Saitek. It was quite frustrating to use at first, but I have gotten the hang of it now and am a much pilot with it.
