How are they working? I need a brief lesson on how and what to look for, please.

First you need to get a missile launcher and add it to your ship, once you have that in place you then need to buy some missiles from a vendor or bazzar , and again add them to your ship in the managment panel the same as any other component. Next time you fly your ship it will have a small M and C letter with a number xhowing how many Missiles and countermessures you have .
Hope this helps, it's really as simple as adding any other item but I did find one harder to get hold of than any other part. Never had one from loot.
If this is not your problem and you want to know what stats to look for , then I can't really help as I have not been using them long myself.

Do I just need missile packs in my inventory, or do I have to load them somehow? When I click on the packs in my inventory in the manage screen it says I can't load them.

It says you can't load them, but it loads them anyway. Check the launcher to make sure it's loaded.

i usually load them up for a bit of extra firepower, good once the shields are gone and can rip through the armor. bad thing is that once the missile targeting locks on a target i have to resist the urge to hit the trigger and fire them. the better the missile, the more damage it does, i use mark 1s at the moment but plan to upgrade soon. i have a y-wing longprobe that can carry 2 launchers so i've usually got 1 launcher loaded and armed and some spare energy to place more powerful guns.

Missiles from T5 B-Wings and Y-Wings, when I don't pop a countermeasure, take about 40% off my 1700hp shields.
It's rhythmic when they do it - two shots (I always look for blue bolts or listen for a heavy cannon fire nearby - both of which signify a B-or-Y-Wing is shooting at you), and it's predictable...if I don't jink out of the way after that second bolt hits or whizzes by, I get a missile warning.
It's not a good idea to take these guys head-on from 700m, either. If you have to - use boosters to minimize the time they have to lock on.
Seriously, though - invest in a countermeasures launcher. I personally use Micro-Chaff and it's about a 5k load but it's worth it when you're getting missiled to all hell and gone. Regular chaff launchers take about 1k.
Of course, they're also damn expensive per shot, so if my shields are at 100%, I take the hit.

I guess my 4000-8000 damage 1.02 to shield missiles must be a figment of my imagination or I have yet to come across that blaster you have. I can take an NPC shield out in 2 shots with mine easy.

How do you get them to lock on? I've loaded a torpedo launcher onto my fighter & put torpedoes into it, but when I'm out fighting it doesn't lock on or anything. Should it do it automatically or do I have to switch something on?

Missiles arnt worth it appart from on the corvette and maybe PvP if you even have time to launch 1, unless you think 3% shield damage for 30k missiles is good (another reason having NPC and player ships work under different rules is stupid), usually missiles do less damage than a couple of blaster bolts:/

I don't have a clue what you guys are using as I am doing 50% shield damage per missile so 2 missiles and the shield is gone and if your paying 30K for missiles your getting ripped off. Many vendors gouge for missiles. You just have to spend a few hours to find a fair priced one. I have literally found the same missiles with a price range of 950,000 credits from the cheapest to the most expensive. In other words 1 vendor selling a crate of 5 packs for 50K and another vendor selling the same missiles in a 5 pack crate for 1 Million credits.

High level missiles, such as MarkIII and MarkIV protons, are not economical if you use themagainst NPC starfighters. Projectile weapons are much better in terms of damage per second.
