Lots of people will repec to Jedi, everyone doing the village for example I'm sure.
Lots of 12 year olds maybe. Those of us who play a given profession because we appreciate the work we put into it will shy away from shameless jedi respecing. There will certainly be those who will respec just to try it, but quickly depart when they can't immediately wield a lightsaber. Who among us didn't use our daily post CU respecs to try out professions we never would have bothered with? Gawd, I was a weaponsmith for a day. Skerrrruuuue that.
At any rate, I don't think there will be a significant spike in the Jedi population. It sounds like there will be aspects of each profession that will make them equally attractive. If they turn the game into Jedi Academy, I'll leave nauseated. We'll see.
