Most places seem about the same to me. Except don't tru fishing off the bridges in naboo cities. Lots of snags.

fishing at amedala's private beach on naboo was fun.
its quiet and secluded plus there are a couple of mini missions that you can do from the main house.

the only lake i know of on tatooine - its south of Anchorhead, southwest of Mos Eisley, approximately- zoom in on the cntrl-V map in that general area and you will see a faint blue smudge - its tiny and shallow, but has a high concentration of fish.

I heard the best spot is the Jedi Temple POI on dantooine. There's a small pond that is deep enough to cast your line into, but shallow enough so that you can walk into without swimming. So when you hook a fish, you can just walk up to it instead of trying to reel it in.

I've had success fishing anywhere there's water. I do go into the water and swim around the spot i've picked, to look for plants...
when you start fishing there's **'s that rate the fish concentration, and also the amount of vegetation.
Also, you'll notice as you fish across the the galaxy that the different planets have slightly differently colored fish...
the ray on naboo is blueish
on talus it's brown

Fish Tatooine. Nothing better than pulling a big one out of a bath tup sized lake.
