Really you don't, other than asking the other player. This damage calc is more for understanding how your weapon works so you can choose better weapons, devise stratagies, etc. You can however use the armor calculator on the 3rd sheet and figure out what someones armor rating is by looking at the combat spam. Only problem is that players usually don't have full suits of the same rating in armor so it can vary depending on where your hits land.
In PvE, all mobs have 0 Ranged/Melee/Weapon defense to begin with for purposes of determining damage mititagion. You can test this yourself using the sheet. And you can figure out what their armor rating is by using the armor calculator.

BTW, how about "elite" mobs. Do they have any additional damage mitigation or do they take same damage as other creatures with same CL (guess difference is the damage they do and HP)
All mobs have the same damage mitigation, other than armor, the higher CL the mob, the higher the armor rating is. I've heard many people state otherwise, but the numbers don't lie, test it yourself.
Funny thing I did notice, we are capped between Min and Max damage but Computer characters aren't. You can get hit by a level 500 Jedi sentinel for 50k damage. and you can get hit by a level 1 mob for 1 damage. If they followed the same rules as us then the level 1 mob should at least hit your for minimum damage of their weapon, but they don't.

Does it open? I didn't password protect the document but I did password lock all cells except the purple ones, Just so you don't accidentally break it.

It is too random to predict, you would need to hit something a few thousand times in a row to get an accuracte calculation
