Redfyree, you and I are in the same boat. Last night marked 3 weeks I've had my plant, and it's still small. I am consoling myself with the rationalization that all these plants are unique. Some people have had plants that were capable of high, sustained growth. Mine never got above level 1 (very slow) growth. Just be patient and keep it there, you will fill up the "perfect" health bar and get to a medium plant. That bar may take longer to fill than the other health bars have, but it will get there.
To recap the theory that looks best: growth rate is the rate at which the hidden health bar fills up. When the health bar fills up the plant moves up to the next health level, i.e. from good to very good to excellent, etc. After the "perfect" bar fills up, the plant moves to the next size up. After it becomes the next size, it will start at "perfect" health, so you have a head start - you only have to fill up that one bar (or keep the plant at "perfect" for a certain amount of time) before it will grow to the next size. Just tweak your water/nutrient settings, working with one at a time, one addition/subtraction at a time,until you have a positive growth rate. That's the hardest part.If you have a negative growth rate (wilting, withering, or dying), your health bars will drain, and the plant will steadily go down in health, i.e. from perfect to full of life to vibrant, etc., as the health bars empty. Even if you can only get "very slow" growth, you're at least still achieving positive growth, and the health baris filling. Note those settings, and if you like you can tweak to either side, but if you see "wilting" growth, go back to your "very slow" settings and let it stabilize.
Most people apparently don't think that the resource type/quality don't matter, so that's pretty much all you need to know to work with these plants. Keep in mind that it takes two additions/subtractions of resource per water/nutrient level, so you have 20 settings each for water and nutrients.

my plant is4 days old now, i have only given it water 950+ and nutrients 950+ i have keept the nutirent level at very low and water below normal, the growth rate is going from below normal to slow, but over these 4 days have the plants health gone from good to excelent. it dont consume much resurces, which i recon is because its very young or because the qual is very high.
Besdies that i have a theory that high qual resurces are strong which means if u give the plant alot of these it wilters and die, but keep it at low level the plant grows and dont need much attention because the high qual also lasts longer.But i am a noob in the field of the swg gardenkeeper proffesion so time will tell.

Just wanted to update the universe on my extra slow plant.... I know a couple of people had been asking about if anyone took forever to grow to medium.....

Day 18 (Almost 19 i think...)
FINALLY advanced to Stage 2.......
Has been perfect health and either slow/below normal growth since 9/15.......
The only time I have acheived alot of change in a short period of time is when I spent alot of time online.... and switched to low DR materials but I think that is a mute point... Since I went to perfect health I have done nothing more than check once a day and update the nuts and water........I wonder if anybody has been online a little and still had rapid growth....
How many years will it take to get to large at my current rate.... the world may never know

Been a while folks since my update:
Phear not all ye who still have small plants, i had mine for 20 days before it grew to medium.
Day 23:
Size:Medium
Health: Perfect
Water: Wet
Nutrients: Below Normal
Growth: Above Normal
it has been at this particular phase for 3 days now...
keep heart, eventually it will indeed grow.

I have 2 Large fruiting plants, I got 31 fruit from one and 1 fruit from the other, they are both Perfect Condition and Normal or Below Normal growth rate, BUT for the last 3 days since they updated the Phase 2 aurilian quests, my plants have NOT grown anymore fruit, They are both still Perfect Condition and Normal or Below normal growth rate.
Anyone else have FRUITING plants that have stopped giving fruit since Phase 2 started?!
At firstI thought maybe there was a limit to how many fruit they would grow, but since my first plant produced 31 and my 2nd plantONLY producedONE fruit right before Phase 2 Patches, and not another since, it leads me to believe my plants are either BUGGED or that they only grow fruit ONLY while phase 1 of the village is in affect...

The current theory is that the water and nutrient effect the growth rate and the growth rate gradualy effects the health. To this end I analysed what growth rate various combinations gave. The values certainly differ from plant to plant, and stage to stage so this is just analysing how the pattern worked for my small plant.
Various growth rates and the levels that atained them (steps away from the best growth rate) (Health of plant for that observation):
Below normal:
Dry and Low (0) (perfect)
Slow:
Dry and Low (0) (Vibrant)
Dry and Very low +1 (1) (excelent)
Dry +1 and Very low +1 (2) (very good)
Very dry +1 and Low (1) (good)
BN +1 and Low +1 (4) (fair)
Very Slow
Dry +1 and Low +1 (2) (full of life)
Very dry +1 and Very low (3) (excelent)
Normal and above normal (8) (fair)
Below normal and Very low (4) (fair)
Below normal +1 and Very low +1 (5) (fair)
None
Below normal +1 and Above normal +1 (8) (fair)
Wilting
Normal +1 and Above normal +1 (9) (fair)
Normal +1 and High (11) (fair)
Normal and Low +1 (5) (good)
Conclusions:
Note that while the observations mostly fit the pattern there are anomolies, (e.g. dry low produced two diferent growth rates depending on the health) these could be explained by the health of the plant at these stages. I.e. there is some feedback from health into the ideal water / nutrient levels.
Also, though in the above I estimated that the diferent variables were equaly weighted for the purpose of my 'distance from the optimal' that seems to not be the case. At one point I took out a little water and added a little nutrient, the condition worsened slightly.
Finaly: logic seems to have nothing to do with it though the 'ideal' seems to not vary wildly throughout the various stages of health.

I have tested this a lot and found that swearing profusely at your plant does not make it grow. I have only tried English though, so I think I will try a different language next.

Wow, aachil, nice work. Thanks for posting that. The "steps away from ideal growth" is very interesting. Do you think it's weighted more towards water or nutrients?
I'm afraid now thatthis thread isn't going to help with finding a pattern that can be universally applied to all plants. It looks like it's just going to be a shot in the dark for all of us. Oh well.

HELP!!

ok my plant has been wilting and near death for 4 days.
I have tried most all combo's of water and neut. with no luck, went wilting on day one and has never looked back.
I would like to know how long does it take for a change to effect. meaning once you add or subtract stuff how long does it take before you know if its a good change or not, and when to move on. Do you have to logout for changes to effect or do they happen while your ingame.
Please Help I cannot afford a new Mointor and thats what I will need if this plant Dies
