I remember in one of the older Star Wars books "Splinter of the Mind's Eye" they talk alot about that. I thought it was a neat idea then and maybe they should incorporate it here somehonw.

Template for a Witch or Sorceror(what i would do =)):
Master Brawler/Master Pikeman/Master Force Powers/Ranged Defense Cap/Melee Defense Cap/Melee Speed Cap/Melee Accuracy Cap.
I'm not Force Sensitive yet so im sorta not sure on how the caps work but i used the Character builder on < http://swg.allakhazam.com/db/charbuild.html > and did 0044 on Combat Prowess and 4400 on Enhanced Reflexes for these caps. And after all was done i had 5 skill points left, and this should give some all the ablities used buy the Witches and Sorcerors. The Master Pikeman can be changed to what ever elite melee profession you want.
This template will give you the highest forms of Force Lightning and Force Cone as well as Force Choke, Throw, Knockdown along with a large amount of other abilities. Also you gain the Pikeman attacks and the intimidation 2, though you will have Force Intimidation. This template along with a very strong LVA looted of a nightsister or one with fire DoT will be very formidable player.

Can you get all the skills and never do the Padawan Trials, or do you have to do at least them to "unlock" the Force Defense, Force Enhancement, Lightsaber, etc.?

No... you are only forced to "perma overt" when you do the Knight trials. You could fully complete a Jedi template and never do the Knight trials. That is up to you (in other words, stay neutral).
Whether or not you're hunted by Bounty Hunters is a whole other ball game... called visibility.
- full Jedi Master? That has nothing to do with completing your skills template... that is done through the FRS system.
- use force powers within 32 meters of any players or NPC's and yes, you will gain visibility and you will risk ending up on the BH mission terminals
