BTW, Twi'leks are hawt. Statistically, humans are the best... but Twi's are hawt. And you get that whole secret language thing, which is really nice for driving other people crazy.

Humans get massive pools of action, so we can dance forever and flourish and do special effects. I have mine set to 800/600/600, well under the caps, and I still never need heals while dancing.
The most important consideration however, is how you're going to make your income.
If your primary job is going to be dancer, don't bother to pick a Ro'dian or a Wookie or a Mon Calamari. Your odds of getting tipped as any of those are fairly low. (( Think about it.. Who would you rather watch dance -- The sexy blonde bombshell in the exotic leotard, or the 8 foot tall furball in the sage's hood who keeps growling at you in shyrriiwook. ))
It's also best to choose a real name. If your named something like "Allison", people are more likely to interact with you (and tip you) than if your name is "DanceBotX". And please, for the love of god, consider the rest of the dancers in the world.. If you name your character "SexKitten" and emote every 10 seconds "Will do *anything* for tips!" that brings disgrace on all other dancers and makes me want to punch you in the nose. (And I'm a TKM, so it'll hurt.)

Don't underestimate the number of Rodians, Wookiees, Mon Cals or Zabraki who are happy to see an entertainer of their race in the sea of "sexy blonde bombshells in exotic leotards." after playing male as well as female twi'leks, rodians and zabraks, I found that the income through tips doesn't depend very much on the gender or race of my entertainer, but way more on how good I am at that day in reading people's minds (and how successful their business is). If I get bored enough I might even collect hard data and run a statistical analysis on it, but so far I haven't done it. And of course ymmv.
I agree completely with the name thing, choosing a name that feels 'real' for your character helps as it makes communication with the customer and fellow entertainers much easier. and since the cantinas look rather dull after some hours of playing, communication is everything. (And yes, I learned this with iMaul the hard way; now I'm stuck with that name and try to make the best of it...).

Well, to be fair, the game SWG as is, doesn't give the different races an identity. If you you look up the rulebook their is really nothing written about the races, but a few hints to their different abilities.
Sources for so such are very different, the films, dozens of other computer games, two pen & paper roleplaying games (each with different editions), an enourmous amount of novels.
Each draws a different image, but in game the races don't differ by anything but their appearance. There is no content related to races. So every player has his completely own image of races and the consence about is really minimal. Which leads to the fact that there is no overall identity.
So I wouldn't say, one shouldn't just pick the race that just because of game statistics, since this is what the handbook implies by just referring to the races ability. Afterwards one can create his own point of view to the races at any time.
