This is good...but to elaborate a bit on the cat vs rancor thing:
Sure the rancor should do lots of damage when it hits...however due to it's size typically it would be on the slow side and have a higher chance of missing.
While a cat on the other hand would do less damage on a normal hit but do extremely high damage when it uses it's speed and accuracy to damage a vital area.
Basically the rancor there trying to pound you into the ground like a spike while the cat can do more damage if it pulls off a critical attack a cat normally would...like going for the throat.

I would like to see the pets in general get some bonuses for good care. If they just sit in your datapad all the time and you want to use it after not caring for it for weeks at a time...it is now weaker. Maybe a bit less Health, Weaker attacks, the inability to perform some of their specials due to fatigue. But if you do take care of them (feed them, give them water, play with them). Their Health is a bit higher, They hit for a bit more damage, and they have the ability to perfom an extra type of specials.
Just a small thought that could probably be added here.
That's a lot like how the Hunter class is in WoW... It's really great, although pets EAT alot. Especially the cats and bears

Yea pet skin should definatelyaffect stats. Rancors/Kimos and such should have a much larger damage per hit but should also be alot slower while cats should have a lower damage and hit much faster.
