I'am a former MCh that has just returned to the prof. I have race a few mounts as well, i found spats and kaduu to be the same speed. No difference. The cu pa seemed to be an easy second. But after that everything was just slower 
Mind you I did not have a GCS to test against. I'm gonna look them up now and see if i have the skill to tame one NIce little project for tonight.

I am a non-CH, currently growing a BE-made Bol that will max at level 10 (probably at 7 today). Do I need to find a Master CH to mount-train it for me, or can a lower-level CH do the job? Will having it trained before full growth stunt it?

When I was master CH I outfited my guild with various mounts so we not only had races we used them daily for group hunts. The spats and kaadu are the same speed and faster than everything else. The cupa and wasteland cupa are the same speed but I agree the wasteland is the coolest mount in the game, IMO. I found the wasteland was also better at terrain negotiation. The dewback and bol seems to come in next. The difference between the birds and all the other mounts really shows when you have a group traveling between nests. The difference is small but noticeable and adds up quickly.
The smoothest ride to me was also the cupa but I've loved them since I started the game and still have a BE cupa I ride. I also have a wasteland for the day I return

Try this macro..........
/gallop;
/waypoint;
/pause 60;
/waypoint;
Ride a mount then press the button. Then when you have your 2 WP's record the distance between the twoand try it with another mount. The mount that goes the most distance is the fastest.

The extinct one would have been the "motley kaadu". I caught 2 of them knowing that they would be the chosen one for mounts just a couple days before they released the patch for mounts. But when they were taking too long to grow, I destroyed them in favor of giant spats.
the spats and kaadu are the same speed and faster than the rest but not by very much. My favorite is still the wasteland cu pa. They're much larger than the standard cu pa and you don't look like a fatguy on a tricycle.

That test depends on gallop which most people don't use regularly. For day in and out use the run speed is what I go by. I was going between the Theed cantina and Theater a lot last night helping friends with entertainer quests. I was riding a cupa and a friend was riding a bol. The bol is slightly faster than the cupa I found although not as significant as the birds so the real order seems to be:
bird variants
bol/dew variants
cupa
big critters
The two buildings are 600 m apart and Imaji has more lag than me so I generally have to pause a few times for her to catch up. She not only maintained with me but actually passed me to arrive a few meters ahead of me.

Then simply take out the /gallop command and it will test the speed of your mount normally

I like using my Male Brackaset for a mount. It's the highest non-BE mount with 9400 HAM, plus it's tall enough that he can run through most rivers without having to swim. I also have a Wasteland Cupa mount that use, and I have raced several other mounts and he's always won for me.

What colors do Kaadu's and Wasteland Cupa's come in? I'm going to want to get one or both and I want to get precisely what I want.

I don't care which is fastest .... i only ride my Wasteland CuPa ..... because he looks good ..... and because it'sa "hard to get" mount ....if i need speed, i use my swoop....
