I can't tell you how many requests I've had for mountable gualamas or krahbus. Or pink gualamas, for that matter. 
They seem to be a natural.
Why Eopies can't be mount critters in this game when Qui-Gonand others areseen on screen gamboling about atop one astonishes me to this day. But then again, cu pas and banthas were not included in the original wave of mount critters.
Rontos, too, seem to be naturals.
There have been many proposals for fambaa to be platform critters for heavy weapons and/or shield generators, which of course is another seen onscreen ability in Ep I.
ever wanted a saddle on my kimogila mwuhahaha...... however, as I know following pets are mountable if they reach the necessary size:
all forms of Cu Pas
Carrion and Giant Carrion Spats
all forms of humbabas
all forms of brackasets
all forms of falumpasets
bols ( not exactly sure which races, would guess all but can just confirm lesser plains bols )
all forms of dewbacks
all forms of banthas
the new stuff, kashyyyk bantha, bolotaur, varactyl
... umm..... did I miss a race or two? I heard the mawgax would be mountable but never seen one and still have to try it myself, expect some1 confirms it isnt mountable

Bagarasets CANNOT be trained as mounts. Nor can gurnasets, for that matter.
All the bol variants are mount trainable. A bol pack runner can be trained as a mount upon taming. I haven't tamed a seething bol crusher baby (yet) but can't imagine why it would not be mount trainable as well.
Don't forget that the brackaset variants can all be trained as mounts as well. Lowlands are CL 10 and thus available to non-CHs.
