I only have 1 major criticism on this...
Mandalorians are a race to what I have learned... not a profession...
How can wearing armor change your race? I think Mandalorians would need a lot more then to just "wear the armor". They should also need to do a crap load of quests relating to mandolorians at least. From what Canderous says in Knights of the Old Republic, Mandalorians are real life version of the norse. They fight for honor and pride. It would suck to see a stupid little person running around who doesnt even know what a mandalorian is, much less what they stand for.
Armor cant change a race as far as I know.
And on the strength note, on the way someone posted describing the mandalorian class on this forum, it would become stupid. Sure mandalorians can fight jedi, but they cant take a jedi master... (see episode 2, Windu makes Jango look pathetic)

Yeah, but Jango got hit by a Reek, that didn't help...
Look at my history, it explains everything else....

I do have to agree this would co inside with my elder profession idea that I posted in the core system forum. Not too many people seemed interested in it. The basic idea is you don't spend points to progress in it like JTL however you can only obtain 1 elite profession per your skills. Like BHs/Commandos could go either elder/elite marksman gaining some superior weapon abilities for rifles, carbines, and pistols while like your mandalorian people would gain newer abilities based on certain specifics like BHs getting new combat styles that help them out in taking down bounties and commandos would gain rudamentory fighting styles with melee mitgation 2 (since commandos are supposed to be range and melee heavy hitters
) .
