That's got to be alot of maintanence time...sheesh!!
My plan for now is to have 4 Heavy Harvestors(flora), a fusion generator, water, and maybee a chemical. That should be, in my opinion, enough to get going.
Do you all agree that heavy harvesting and stocking during the Chef XP grind is important?

I have:
One shop - small round Naboo, one lot
3 storage houses - 2 small Tat, one small round Naboo - 5 lots
8 factories (7 food/chem, 1 clothing/armor) on rented lots. They run pretty much 24/7.
A large collection of heavy harvesters of all types.
+10 in food experimentation, for an extra point. I got lucky with those, and have been looking to get the 12th point but the prices are so outrageous that I've come to the conclusion it's not worth it.
2 BE's on call, and quite a few scouts/rangers. I make my own trim.
I buy all my meat/milk/hide and grind resources, and buy high quality resources when I can, but most resource traders cater to doctors and have no idea what chefs need. So I harvest most of my stuff. I've only got 4 lots to use, but when something really good comes along I call all my friends and guildies and start passing out the heavy harvesters.
It's a good deal for everyone involved, I get the resources I need and cheaper than buying them, they get a hefty lot rental fee for not much work.
I am lucky in that my business partner is an architect, so I get my harvesters for free. (Well not for free, he gets half my profits - I think he's got the better end of the deal!
) But if you're looking to acquire a fleet of harvesters, I'd suggest you contact any successful crafters you know and offer them the kind of deal we've been making with the young artisans in town. We give them a harvester, and enough power and credits to start it off, and then they pay us back with an agreed-upon amount of a resource we're after. Once again it's a great deal for both parties. After a few days of harvesting they own the machine free and clear, and we've got the resource we need at a cheaper price than buying it outright. Busy crafters are always looking for resources and usually have money to throw around, so if there are any who know you well enough to trust you, I bet they'd love to make an agreement like this.

Ah yes, forgot the vendors. I have three. One for stat buffs, one for combat food, and one for non-combat food (i.e. everthing else). I have seen people organize by singles/crates as you mentioned, or by food/drinks. And there are plenty of chefs with only one vendor. But with 1000+ items in stock and living in the thick of the Dantooine lag, I really needed to break things out more. 
Also another suggestion for acquiring the hardware you need to get started. Check the bazaar! I have an alt toon on another server, where I don't know anyone, and he's had to pull himself up by his own bootstraps pretty much. He's acquired a fleet of about 10 medium/heavy harvesters, all BER 10/13; a BER 14 fusion; and three food factories. All of the above were being sold on the bazaar, with spare maintenance and power in them, for 6k each. As people are getting done with the hologrind, a lot of them are dumping their used equipment on the bazaar just to get rid of it and get a little money back. I check the bazaar daily for finds like these. Usually I strike out, but sometimes I'm the first to see that amazing bargain. Try it, you might get lucky.

I am not an expert and perhaps I have too much or too little. Sometimes I get lazy and others I am just unorganized. But this is what I have
I have 3 Accounts(4characters)
6 Food factories-soon to be 8
15 medium Flora
4 Heavy Flora
12 med Mineral
2 med chemical
5 heavy chemical
8 heavy water
2 equipment factories
1 clothing factory
1 small house
4 medium houses
14 crafting tools, (i loose them, lol)
1 crafting station
With my characters I am a Master of Chef, Bio-Engineer, Doctor, Artisan, and Merchant.
I am using a minimum of 25 lots at all times, sometimes all 40, or more. If I need more, I rent lots or hire a contract harvestor.
I am 8 contract hunters whom I deal with, and often by resources on the open market. I have found recently that I have acquired well over 5 million units(i stopped counting here) of resources, some never even used, but I cant bear to sell. I am a packrat, lol

It's certainly a good idea, I did the speed grind to master chef and at the minute I can't make anything as I don't have the respources 
Trouble is of course it only took me 8 hours to grind which doesn't leave much chance for harvesting.

Starting out I needed about 10 food chem factories since I wanted to get my vendor in stock as soon as possible. Now I have
4 food chem factories - tissues, components, final product
1 clothing factory - trim for casks
14 flora harvests - sporadically chasing spawns
4 water harvesters - drop those time to time when water starts running dry
5 mineral harvesters - gotta keep the crystalline gemstone in stock
2 chemical harvesters - to get fiberplast and polymer for the trim
1 medium house - I keep a vendor in there....unlimited storage
Past that I seem to be running smoothly and selfufficient. I might buy my wheat or other grinding quality flora for food components, and I also buy my power.
