I've been working as a professional player event promoter since August of last year. I've made close to 500Mcr to date and are projecting at least that in the next 12 months.
A good friend of mine ran a deliver business for over a year and a half and became wildly successful.
Another good friend of mine created an entertainment agency, repping dancers and musicians and booking them gigs.
What other unconventional in-game business are out there?

I make and sell card (pazaak) and dice games - giving lessons and selling decks and packs on the bazaar. Made 30k last time I was on (which to me is a phenominal amount of money).
If I can build up the stock, I'd like to run tournaments, and I'm sure that would do well.

Interior Decorators. If I could do 1/4 of what some of themcan do I'd be a happy camper! LOL

A friend and I once ran a Roleplaying Private Investigation service on Kettemoor - We got hired for all sorts of RP events, being payedpretty large cuts (we once RP'd looking into the burglary of a small arms store, and got a couple of nice Krayt DL-44s out of it).
I had Master Artisan and there was someone hologrinding Architect in our guild at the time, and I had been killing meatlumps since June 2003, so we had plenty of Vid Screens, repair kits, misc. loot, etc...The local Merchant even set up a secretary droid vendor for us to put purchasable appointment schedules on.
I think that we made about 20 mil each for the two months we did it (as well as getting some nice items and rare loot, such as the Endor Rebel Helmet and aforementioned Krayt DL-44s).

I ran/ run a band... not unlike your entertainer broker friend except I am in the band. We would work on live events and promoting them as well as be an active participant in them. We all did exceptionally well and I think were likely the highest paid entertainers on the server.... A big problem however we had was too much demand and not enough supply of entertainers.... in days of old we had 5-7 other bands we could book to help us but as they left, demand skyrocketed.... from oct-dec('03) i think we had around 177 requests per month which we obviously couldn't fill.... eventually we scaled that down... raised rates and accepted only the first 7/ month that asked. It was a fun business, but it truely was a business and we mostly do not do that anymore as we don't need more money and it was a lot of work to make RL and GL fit.

Oh, easy. As a roleplaying smuggler, I feel my business is a professional obligation. I'm what some call a set-up man. For example- somebody is about toattack a hardNPC? I set up one or two pets behind alleys, trees, any other natural cover,attack the person as a first wave, attempt to distract them. Then, through the magic of /tellpet, the main fighter is fighting with the aid of several brawny rancors. Meanwhile, i am carefully sneaking off to save my *EDIT*.
I am also what people call a pusher. I sell spice in an unusual way. Unlike some who shout IN IMPERIAL CITIES they are selling
Muon Gold by the crate, I wait in alleys and wait for someone to pass by that look like a combat type. Then comes the "Hey...you. Over here. You like being strong, right?" etc.
I also act as a player innkeep on Bria, serving up full meals tailored to the guest's profession's, and offer my home as a rest area. On site healing and high level crafting stations are provided, as well as complimentary resources.

Professional stalker paid to follow another player to keep tabs on them
Informants players paid to report intel to other players. I ran a spy ring and while I did not make alot of money made alot of friends.
Guide paid by players to guide them to certain areas in the game.
Mayor some players get paid to do this.

For awhile I got payed by a guildie to pull money from his GH, and pay the maitenance on his harvesters, since he had little time in game.

For a while I ran a lot business. A friend of mine needed some harvies placed, so I placed them and looked after them but he paid maintenance and "ran" them. I got 500K for one month.

I run a vendor aimed at supplying entertainers. I did a lot of shopping around buying any houses, speeders, swoops, clothing, Clothing Attachments for BF and Buffing, paintings, furniture, low level pets, Droids with Playback modules and Effects ect. I could that were far cheaper then normal and then marking them up only a little bit. As most live entertainers don't have a ton of money. I also stock Accaragm and any other quickness or action drinks or foods that I could come across. Not being in a guild though hurt as I was unable to partner with any tailors or chefs as most of them had their own vendors.
And although a slither horn is a slither horn. I made different levels of instruments and priced them from starter instruments up to master and Legendary Instruments. And almost all of my items had interesting and fun RPing sort of descriptions.
The vendor is down currently as I'm trying to move into a new shop. But I was surprised at how well it did.
