High defence against a Jedi doesnt work very well. For one my saber is just over 600 min 730 max with 210 elemental, so the defence vs accuracy penalty is not very high. As Master Saber using accuracy food and mods, plus sticking states I'll hit often enough to easily kill you. Your better off with good healing.
