I'm not going to give you numbers (I made an attempt earlier this year to compile some tissue numbers and that attempt was met with mostly animosity) so I avoid doing that now, but I do have some comments.
I think the two things you have to consider is: what price will make you competitive relative to your peers, and what price does your conscience let you charge relative to your costs? On the competitive issue, I've never played on Tarquines, so I don't know your economy, but those figures (10k or 7k/tissue) is kind of shocking to me. I've seen very good tissues sold for as low as one-tenth of that price on Bria (although that is admittedly extreme). I really doubt either you or your tailor partner could remain competitive with such prices. Perhaps if you were setting incredibly high standards (like +19 tissues), but that's probably not what we're talking about here.
As far as reasonable charges given your costs. Here are a couple of data pointsto consider. It takes rougly the same amount of organics and flora to make an active bio sensor as it does a broad spectrum nutrient, so I don't think there is much justification for charging grossly more for one than the other. The other data point is that a price of 10k/tissue equates to 125cpu+ (depending on the tissue) which is a lot, even by chef standards (edit: well, now that I think about it, since they use mostly flora, 125cpu isn't a lot by their standards, lol).
Oh, your other questions. No changes have been announced for bio tissues, and no changes have taken place in tailor tissues in the last 12 months, so don't hold your breath. As far as sustainability, well, for the past year we've been playing with the same tissues, and the same indistructible clothing, and for the first time in the last year there is a bunch of new clothing, so it would be difficult to imagine that demand would worsen over the current level. If anything, it should improve a bit. What you say about clothing is true, to a point. They are certainly not consumable like food. But I certainly do get a lot of repeat sales. In fact now that I think about it, I think my characters (even the ones on another server where I'm not a BE) probably go through bio clothing faster than they do crates of brandy, lol.

I hope we see some big changes after the combat balance... on a side note my pants that are at 0 condition are shaded now.

I just hope there are more defensive stuff... besides the doc stuff it seems to be the only thing that sellls all the time... besides hood-up cloaks 0.o

Actually I think there will be less, but there is a good chance more people will be wearing clothes than armor.
