Personally I 'roleplay' the nervous scientist that always has a speeder bike and full set of armour on hand at the first sign of trouble.
I dont need combat skills and I dont need to defend myself - I run.

Pick your target, speed up to about 70m. Then go real slow up to about 60m. In my experience, most critters break your maskscent at around 65m. If they do break it, dismount amd reapply when the timer goes down. If you're within the 65m, they shouldn't break it again (Shouldn't being the operative word, occassionally they will, especially the high-end critters). Once you're within the maskscent radius, speed up to the target, dismount, sample, remount (I have a macro for this). If they aggro, bug out till they peace and repeat. I have never, ever been DB'ed or even Incapped using this method. My maskscent bonus is +95 with all my clothing BTW.
Sampling was easy as hell to level out. I'm currently at 2242 and actually went 0040 before I reluctantly started the grinding malarkey.

The way I understood it there was 2 mask scent "checkpoints" one at 65m and one at around 40m. There may be a third, I have noticed that it will break on occasion nearby, without my doing anything to provoke it. I saw something on this in the scout forum a while ago, maybe I can find it again to re-post it here.
