I think they are willing to temporarilly live with the hinderance, in exchange for the higher protection and not having to buy a new suit of ormor at the end of the week when they are done grinding... and really, under the new system, that is all it takes to master any combat profession.

Depends. If you grind in hunting groups, like many people do now, the encumberance doesn't matter so much. But then you could usually also do well without armour. If you hunt alone, encumberance matters a lot.
