I've yet to start from scratch so I can't help you with the XP issue, but trainers I can help you with.
For all the core ranged profession trainers, I use Dearic, Talus. Travel to that city and type /find trainer:marksman and it will give you a path and waypoint to him. Nearby you'll see Pistoleer, Rifleman, and Carbineer Trainers.

At novice Music you max out at 350K Music XP and 100K Entertainer XP. I think the 100K ent XP is correct, but I tested the music XP one and it is SOLID.

Well for either method or conversion rate you should probably check out the FS forum.
We tend to play music here for the sake of music, not just as a means to get Jedi. I'm sure the FS forum has conversion tables and what skills you can get and methods for turning in XP.
