A higher assembly mod gives a better chance of getting better successes on the initial combine. So, theoretically, having 120 should give you a noticeably better rate of amazing successes, and a lower rate of critical failures as compared to the standard 100 given for MWS.

But thats just on the first part not when I experement?

Correct. Experimental sucesses are determined solely by your experimentation mod.

over a couple months I have only had 1 or 2 critical failures while using my +28 assembly and some crafting assembly food.
