ok, there is going to be a "Keeper of the Records" to clear out the themeparks if you already did 'em, right?
So, does this mean you can run through Jabba's Themepark, get the new weapon schematic, talk to the record keeper, clear it out, and repeat?

The record keeper will only allow you to clear your progress once.

so, I can then get two schematics from all themeparks I haven't finished (which would be... all of 'em)

Not necessarily. What i'm thinking happens, is that when you go into the themepark, there will be a records keeper there, to whom you can speak to erase your current progress within the themepark, which we have been told you can do only once. If you choose not to start over, however, I would also think that once you complete the themepark post-publish, you will be flagged, and the records keeper will no longer allow you that option.
That's just my guess though, so it may be possible to do it twice. I don't know for sure.
