Does anyone know if a particular NPC drops more WS CA's that other NPC's? Or is it 100% random on that?

Ya, NYAX is a solo player nightmare. I've never seen him with less than 2 swordsman campedand usually 3-4 melee dopes (Several on a combat loop macro!!!!)
So of the ones you listed, do you have a recommendation?

Nightsisters, if you can handle them. Sentinels have great drop rates. Singing Clan sisters are good too.

There's a loooooong debate over what drops the best CA's. Now we know - Lord Nyax. Camp him and sooner or later you'll get a +10 or more Weapon Exp tape, but enjoy having the other 20 people waiting for him steal your kill. Nightsisters (Dathomir), Mauraders (Endor) and Canyon Corsairs (Lok) have been known to drop good CA's too. I got a +6 weapon exp tape off of a Sith Shadow Thug last night, but I wouldn't go around soloing those guys on your own...
