You get a +10 weapon assembly bonus from Calamari so its a good choice if starting from scratch, Human's get a +15 artisan experimentation bonus so not really useful unless you are planning on having your alt master Artisan also and sellign Artisan wares.
You can always make up the extra +10 assembly from clothing attachments so its not the end of the world if your not Calamari, plenty of successful non - Calamari WS out there.

wookiee is a popular one if you don't mind buying the attachments. The Bowcaster is basically the only race specific item to craft, but if you don't care about wookiees, go with your gut on the race you want.
