Currently mine is +160 but, my question is...

Does the +160 skill mod actually apply or is it capped at 100?

the unarmed damage skill mod goes up to +250 at master. It's not capped. The +250 is added to whatever you are using. Either your bare fists or your VK.

Or, if you are a doshan, like me , at master, my unarmed damage is +265.

And atimes is exactly correct. This is added on top of what your fists and vk's do.
