I made a character on TC2 with TKM and i experimented stacking dodge and then counter attack. Despite all of the defense acuity I got from TKM, I noticedno difference in how much I dodged or counter attacked, even when I used COB. Am i doing something wrong?

Defensive Acuity is a stand-alone secondary defense, that none of the other professions have. It won't stack with any other secondary defense.
Rifleman and Pikeman share Block, Carbineer and Swordsman share Counterattack, and Pistoleer and Fencer share Dodge, but Teräs Käsi gets to keep Defensive Acuity all to itself.

Then why do some TKMs take up fencer or sworsman?

Some TKMs take up other melee profs because primary ("Melee Defense" and "Ranged Defense") and state defenses ("Defense vs. Blind/Dizzy/KD/Posture/Stun" etc) DO stack up, and it also offers a variety of damage types that aren't Kinetic (Blast from Swordsman, Stun from Fencer, Electricity from Pikeman).

Then why do some TKMs take up fencer or sworsman?

for the def vs states ie TKM very low dizzy def ,but fencer have great def vs states , these all stack up to 125 and if you manage to get that high you wont be able to KD it quite nice really
