From what ive heard melee speed is useless as we are speed capped at 1/sec.
That leaves:
1. Melee Accuracy: Are we capped as well?
2. Ranged def
3. Melee Def
Everyone agree that nos. 2 & 3 are worth it? Is number 1 a maybe or so-so?

Accuracy has no cap. Any accuracy we can get will help.
Ranged defense and melee defense will help unless you've already hit 125 or more in either due to defense stacking and/or attachments.
Everything else is up in the air... If you have a ranged profession, the ranged accuracy will definitely help and the ranged speed might help. Luck might help anyone in looting. Vehicle control will help if you're trying to get racing badges.
If you plan on going all the way to Jedi, you have to consider what will help you more as a Jedi. It turns out, not much. There's a great discussion on the matter in the Jedi forum, read it and check out where it says "FORCE SENSITIVE SKILLS AND JEDI".
