Everyone with a melee profession can defeat a knight if they know what they're doing. I won't get into a "how-to" tactic, but the general jedi behaviour is very predictible: if they run out of force or take serious damage (half HAM), they'll try to make a run for it. Two tips here:

1) land states on them as much as you can (although they can heal very fast, it also costs them a lot to heal and they'll eventually drain their force pool); intimidate should be the 1st state to attempt

2) if you warcry, they cannot force run
