Except that it's Y'all, as in "You all" or "you uns".

Y'all is a greeting to one person
Y'alls is a greeting to two people
and
Y'allses is a greeting to more than two people

The use of "y'all" on that map stretches sporadically beyond those borders, but that's what you'd expect dialect to do.
I have no idea what this has to do with tailoring, but it strikes me as funny just the same.
