Just wondering if you can change the trim colors on these shirts? I've seen npcs with both black and brown trims. But had one made but the guy said he wasn't able to change the trim color, he wasn't near a crafting station (i don't think) just wondering if that was why. I've seen some tailors able to make a outfit a color another tailor couldn't

I am not yet able to make trim lined shirts, but in response to the question of colors: all Novice Tailors should be able to make the same colors. Thereafter, those who have put points into the Tailoring line will have progressively more colors than others. So, a Casual IV Tailor will have fewer colors available than a Casual I Tailor with Tailoring I.
