I think you can do it as many times as you want. There is character at the entry of Jabba's Palace where you can reset your progress in the Themepark. By giving different schematics out this will have people doing it over and over again.

The drops are completely random. I didn't get the belt schematic, I got the leotard schematic. I didn't get the Twi'lek poster, instead I got a highly disturbing poster of Sy Snootles in a bikini (ugh).

Yes proper ones you can put on the wall...haven't seen the Sy Snootles one but the Twi'lek is pretty nice.
