I have Had Master Merchant as Long as Tailor and am happy with it {i dont care my profs mean nothing to anyone, they only have to matter to me}
I have known several Tailors who have done pistols to ID..so really only advice is do what you want and will enjoy.
Master Tailor (my main prof that Teero's been for about a year now)
Master Image Designer (not only can i give someone some new threads, but i can give them a completly new "look")
and the rest of my points have been dumped into Merchant (advertising 4 is a MUST HAVE to successfully run a business it seems)
Oh, wait, you wanted non-combat. Everyone's been giving pretty sound advice on what and why. If I didn't want combat I'd probably be Tailor/Musician, but the field is wide-open. (Pre-CU, Tailor/Doctor had the roleplay synergy: sew up your wounds and your clothes in one stop!)
BE would be nice, but with multiple characters it would work better to do BE on someone more combat-oriented. It's not a real requirement; I've gotten along without BE for two years by buying crates.

If you are planning to have a shop then you should consider Master Merchant not only for the ability todress your vendors but also for advertising (which is a huge issue for any shop owner) as well as the Merchant Tent option which is a bonus.
Being a BE is also nice however unless you intend to have some combat skill to defend yourself while collecting DNA, Milking and gathering the much needed resources I would suggest going with Tailor/Merchant combination.
Architect, to do it right, would require numerous resources as well as factories. Unless your going to be willing to spend time finding over 200k ore to make wall mods then it is not worth the effort. Yet if you are creaive and enjoy decorating you can use your tailor skills within the Architect profession. For example: Drapes/Curtains.
It really is a matter of how much time you want to spend Crafting compared to out Hunting & Gathering.

Ilove being an image designer /tailor. But that's just because i love both professions
I can't ever see dofee giving up on image designer, so i never really contemplated another profession (to get next to tailor that is. she was a dancer/image designer first) And master merchant is indeed a plus if you want to open a shop (though it really does depend on how many vendors you want and what you want your stocklevel to be)
In the end, the only thing that matters is what you think you would enjoy most.
