how much in attachments would i need to speed cap, accuracy cap after master swordsman?

There's no longer a "speed cap" - you just reach a point where the mods just really no longer give you any real additional benefit.
You COULD theoretically get +500 extra in 2h AND General Melee Speed using a suit of armor and an ubese shirt and bando, plus a mabari belt, but chances are it wouldn't be appreciably or noticeably better than +50.
Simply put, you're never going to hit once per second ever again. Not gonna happen.

It's the same as armor. If you COULD hit 10000 with crafted armor, that'd still only be 60% protection.
