Its pretty easy to beat Jedi actually.
PH's are best against most Jedi even though they aren't as good against non-Jedi because of their accuracy. When you're using a scythe, like you were, capping speed isn't as important, but if you want to dedicate yourself to Jedi hunting, capping speed and getting a big hammer is the way to go.
Let's take a 2.2 / 450 Scythe and a 6.0 / 900 hammer.
At 80 speed the scythe is at 358 dps.
At 97 speed the hammer is at 787 dps.
The only Jedi you would want to break out the scythe for are Master Defenders who can get pretty decent melee defense with clothes, food and attachments. I'm pretty sure though that a hammer with snow cake would hit a Master Defender almost every time.

i wasnt capped. lol i got as much speed as my sig says. i used a 2.6, 380 scythe for 90% of my pvp over the summer.
the thing is i had no defense. capped counter-attack... might look good, but lets look closer. counterattack stops damage. it doesnt stop states from going through however. that means i get stunned, blinded, dizzy'd incredibly easy. once i get stunned, it really should be a piece of cake for the jedi.
