i am just wondering how much accuracy you need to have to almost never miss creatures like
geonosian skinnys?

PvE is different to PvP. As a rule of thumb, simply because this is what I use, master accuracy and a -18 range power hammer and I can go a full buff session and not notice a miss.
PvP I am still trying to work out. I know that defences are capped at 125. So u need 125 or more accuracy from player accuracy, weapon accuracy and food accuracy (if necessary), and also skill attachment accuracy. Not to mention the force sensitive accuracy skill which I will most certainly be getting.
Player enemy defence (PED)= 125
PED =< Swordman total accuracy mod(SA)
Master brawler (+5) + master swordsman = 135
power hammer weapon range = -19
SA = 116
The base accuracy for my swordsman character is 116
PED - SA = 9
I need +9 more accuracy to theoretically never miss my PvP opponent ( assuming I am not blinded! ).
Without looking at any skill mod attachement the +12 force enhanced accuracy will take me +3 above the accuracy to never miss in PvP.
However this is not the whole story since I have heard that accuracy also effects the probability to land the elusive swordman dizzy move (area3). In this case a high accuracy scythe is going to be best.
If I used an ackley power hammer:
135 + 12 = 147 - 40 = 107 i would need to eat citrous snow cake in this case. I believe +40 accuracy.

1 thing to add, there was a patch (1-2 months ago) that made it so that you could never get enough accuracy to always hit. Like the combat medic changes, you always have 5% chance of missing. If they have a higher melee def than you have accuracy, then they will have a 5% chance of getting hit.

160 should be the cap, so 170 is too much
. 135 from M.Brawler and M.Swords and your +25 from attachements (or rodian bonus)

except of course thats not the way it works. if your accuracy equals your opponents "PED" lol you are gonna be missing a helluva lot. sorry but true. blind will make it much worse. dont use a hammer unless your fighting ranged. then you get the +50 to-hit so you dont have to worry so much about accuracy.

I'm at ~145 acc (will be getting more soon, i just dont wanna give up my backpack) and I use citros snowcake in PvP... but -40 range mods on an acklay PH can be a **edit** sometimes, thank god 915 max unPUd makes up for my missing

Im not bothered about the max damage for PvP. The min damage is what is used when ur opponent has melee mitigation (and if they dont then god help them). I bought a 322 min damage ackley power hammer and used it on my guildmate when he asked for a duel. Its pretty strange to see a buffed person health go down 1/8 of the way in 1 hit. Ofcouse for a ranged opponent its different. I had an overt attack my teffed noob teammate. The bounty hunter must have had the shock of his life when I took him down in 5 seconds flat with my speed (read sucky) sliced scythe blade. Sure me teammate was incapped but he was dead before he could select deathblow hehe.
