Actually, I'm pretty sure it does work for swordsmen. I haven't tested it, but I remember readingthat it didsoon after the chef changes. I know the dodge skill mods are for fencer and pistoleer, but this is something different, just with the same name.

I am a swordsman/doc...means I have 0 dodge...anyways,I have a looted d-18 pistol (with +1 dodge) I use to bring targets that are far away to run torwards me. I was in the aa'kuan cave and had the gun equiped shooting at them. One of them shot at me and in combat screen it said I dodged the attack. So the +dodge modifier works even if you are not a fencer or pistoleer

Air cake's dodge is completely different from Fence/pistols so it works for all professions.
And it does not stack with pistols/fencer dodge, too
E.g : Someone swings, you have air cake and you are a Fencer...first Air cake is solved, you dodge/or the attack passes through air cake, then faces your own dodge/counterattack/whatever ability..

a novice marksman with 0 dodge and a pistol equipped will dodge. I don't know why, but he will. You don't even need mods on the gun.

Pikatta pie and air cake both work without having to have fencer or pistoleer

Official word is that it adds to the general defensive roll, which has been interpreted as a boost to ranged and melee defense. Anecdotal evidence suggests that it adds to ALL defensive rolls, including dodge, block, and counterattack.
I'm fairly confident that it does add to Counterattack.

You said it yourself, you had a pistol equipped, that is why the dodge worked.
